Grilled Cilantro-Lime Steak with Corn & Avocado Salad

Ingredients


For the Steak

1½ pounds flank or skirt steak

2 tablespoons olive oil

1 tablespoon lime juice

1 tablespoon fresh cilantro, chopped

2 garlic cloves, minced

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and black pepper, to taste



For the Corn & Avocado Salad


2 ears of corn, grilled and kernels removed (or 1½ cups canned/drained)

1 ripe avocado, diced

1 cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

2 tablespoons lime juice

1 tablespoon olive oil

Salt and pepper, to taste



Method


Marinate the steak

In a bowl, whisk olive oil, lime juice, cilantro, garlic, cumin, paprika, salt, and pepper. Rub onto steak and let marinate at room temperature for 15–20 minutes (or refrigerate up to 4 hours).


Grill the steak


Preheat grill to medium-high. Grill steak for 4–6 minutes per side, depending on thickness and desired doneness. Let rest 5 minutes, then slice thinly against the grain.

Make the salad


In a large bowl, combine corn, avocado, cherry tomatoes, red onion, cilantro, lime juice, and olive oil. Season with salt and pepper and toss gently.

Plate sliced steak over or alongside the salad. Garnish with extra cilantro and a lime wedge, if desired.
